You will need:

  • 2cups Basmati rice,
  • 3cups water,
  • 1cup grated coconut,
  • 1 tsp mustard seeds,
  • ½  tsp asafetida,
  • 2 green chilies chopped ,
  • 2  red chilies broken into bits ,
  • 4  Tbs butter or ghee,
  • a few curry leaves,
  • 1tsp salt,
  • a handful of fried cashews to garnish.

What to do next:

Heat butter / ghee. Add the mustard seeds and fry till they splutter.

Add red chili bits, asafetida and fry for a few seconds.

Add the chopped green chilies, curry leaves and the grated coconut.

Sauté on low heat till the coconut is light brown.

Boil water with salt.

Add the rice to the coconut mixture.

Stir briefly.

Add boiling water then fried cashew nut bits.

Steam for 15min.
