Ingredients

  • 6 large same size potatoes
  • 2tsp rough salt
  • ¼ cup olive oil
  • ½ tsp black pepper
  • 1Tbs chopped parsley leaves
  • 3Tbs butter

Method

Pre-heat oven to 200deg. C

Wash & dry potatoes then pierce with folk 3-4 times.

Sprinkle salt on roasting tray

Brush potatoes with all olive oil

Roll potatoes in salt & bake until cooked, +- 1hr.

Half the cooked baked pototoes, let cool.

Scoop out the soft centre part & set aside.

Mix together with butter, ½ tsp salt , pepper & parsley

Fill the shells with the seasoned potatoes.
